At the same time, exposure to oxygen, moisture, heat, and light gradually affects the coffee.
Over time, the beans lose some of the volatile compounds that contribute to their aroma and flavor.
That's why coffee doesn't stay at its peak forever.
It doesn't suddenly become “bad” on a specific day. Instead, its flavor gradually changes.
The longer it sits, the more character it can lose.
Roast Date vs. Best-By Date
This is one of the most important things coffee drinkers should understand.
A best-by date tells you how long the manufacturer expects the product to remain acceptable.
A roast date tells you when the coffee was actually roasted.
Those are two very different things.
Coffee can have a best-by date many months away while already being months removed from its roast date.

- Papery or stale flavors
